Upkeep: A Japanese Kitchen Knife

The first thing worth noticing about a good Japanese kitchen knife is that you stop pushing. Tomatoes give up without a fight. Nothing about the motion of your hand has changed; what's changed is that the blade is parting the food rather than wedging its way through.

That behavior begins in the steel. 

For our Japanese kitchen knives, we selected Aogami/Blue Paper steel, and it is a hard steel rather than a fragile one, a distinction that gets lost more often than it should. Taken to 61 or 63 on the Rockwell scale, it holds a geometry that a softer steel simply cannot. The thinness is the entire point. A thin blade displaces less food, so it meets less resistance, so the hand does less work and the cut arrives where it was aimed.

The name of the steel is more literal than it sounds. Aogami comes out of the Yasugi works in Shimane Prefecture, where grades of carbon steel were historically identified by the color of the paper the stock was wrapped in: blue for this one, white for the purer carbon steel underneath it. What makes blue blue is the addition of chromium and tungsten, which form hard carbides through the edge and hold it together well past the point where an unalloyed carbon edge would have gone soft.

All of this is why a Japanese knife feels lighter in the hand and faster on the board than its Western counterpart. It is also, exactly and unavoidably, why the same edge will chip on a chicken joint or a frozen fillet, where a softer blade would only dull. Like every good tool, a good knife has limits, and knowing them isn't a compromise.

Within those limits, a carbon steel Japanese blade is about as efficient as anything we've ever used in a kitchen. What it asks in return is that the cook be a little more deliberate—that the bones come out before the blade goes in, that the fish thaws first. It is a modest ask. With that agreement in place, the knife will deliver a lifetime of service, which is a longer relationship than we usually expect to have with anything in a kitchen drawer.

The care follows from the same logic. Never run these knives through the dishwasher. Wash them by hand in warm water and dry the blade immediately, because a high-carbon edge tarnishes if left wet and will rust if left wet long enough. Citrus, tomatoes, onions, and anything else acidic will mark the steel within minutes, so the habit worth building is to wipe the blade as you work rather than waiting for the end of the job. A thin coat of oil before the knife goes back in its guard protects it between uses, and matters most when it's going to sit unused for a stretch.

Over months, those same acids and oils darken the exposed steel into a patina. It is protection rather than damage, a passive layer standing between the steel and the next tomato, and it should be left alone. Scrubbing it back to bright undoes work the knife did on its own.

Sharpen on water stones, and keep the edge off bone and frozen food. That is very nearly the whole of it. A knife like this does not stay new, and it isn't meant to. It gets used, and it shows what it has been used for, and after a few years it becomes the one you instinctively reach for.
