In 2022, Magali Soucille was preparing a family meal with her P’tit Tradi, the small kitchen knife her family's forge had made for decades. When she encountered a cut of beef too large for her beloved Tradi, she asked her husband, Vincent, to design something bigger.

With a 5" blade, it sits between a paring knife and a full chef’s knife, and it covers most of the work on a cutting board: trimming a roast, slicing onions, breaking down squash, carving at the table. It’s light and quick. The full-tang blade is riveted to an aged walnut handle, giving it a solid, balanced feel well beyond its weight.

This is the knife we keep within reach for everyday work. The one we don't have to worry about. The stainless blade needs little upkeep, and the knife carries the weight of centuries of knife making in Thiers.

Product Details
Thiers, in the Auvergne, has been France’s knifemaking capital since the Middle Ages. Goyon-Chazeau was founded there in 1975 and remains a family business, now in its third generation, lead by the founder's daughter, Magali Soucille.

The blade is cut from Sandvik 14C28N, a Swedish stainless steel balanced with carbon and nitrogen for a fine, keen edge and strong corrosion resistance. It is hardened to 56–58 HRC, a range that holds an edge well while staying easy to sharpen at home. The blade is fully ground, with a plunge line where the bevel meets the heel, and given a custom matte finish. The tang, a tenth of an inch thick, runs the full length and width of the handle, set between two scales of aged walnut and secured with rivets. The Goyon-Chazeau workshop finishes and assembles each knife by hand.
Le Grand Tradi
- Blade steel: Sandvik 14C28N stainless, hardened to 56–58 HRC
- Handle: Aged walnut
Overall length: 9.4"
Blade length: 5.1"
Blade width: 1.4"
Weight: 3.4 oz
Wash by hand with a soft sponge and dry immediately. Never leave the knife soaking or near a heat source, and keep it out of the dishwasher. Store it dry, and sharpen the edge as soon as it begins to cut less cleanly. From time to time, rub a few drops of linseed or olive oil into the handle to keep the walnut from drying out; it will darken and deepen with use.
