Product Details
Thiers, in the Auvergne, has been France’s knifemaking capital since the Middle Ages. Goyon-Chazeau was founded there in 1975 and remains a family business, now in its third generation, lead by the founder's daughter, Magali Soucille.
The blade is cut from Sandvik 14C28N, a Swedish stainless steel balanced with carbon and nitrogen for a fine, keen edge and strong corrosion resistance. It is hardened to 56–58 HRC, a range that holds an edge well while staying easy to sharpen at home. The blade is fully ground, with a plunge line where the bevel meets the heel, and given a custom matte finish. The tang, a tenth of an inch thick, runs the full length and width of the handle, set between two scales of aged walnut and secured with rivets. The Goyon-Chazeau workshop finishes and assembles each knife by hand.

Wash by hand with a soft sponge and dry immediately. Never leave the knife soaking or near a heat source, and keep it out of the dishwasher. Store it dry, and sharpen the edge as soon as it begins to cut less cleanly. From time to time, rub a few drops of linseed or olive oil into the handle to keep the walnut from drying out; it will darken and deepen with use.
